The cantina itself faces North and is a sub-terranean structure containing an impressive building within a building. This means, the cellar is literally encased within another space, one which features double floors and ceilings as well as a corridor surrounding the cantina. This ingenious design creates a system of self-circulating air, which naturally regulates the temperature around the cantina walls.
Within the cantina, keeping the optimum temperature requires a little science, and at Monterosola, we use geothermal energy with heat pumps that control both the cooling and heating of the property. This fully integrated, sustainable system maximises on the use of natural energy year-round, season to season. For example, any residual heat from the cooling systems is automatically fed into a pool which eliminates the need for noisy fans. In addition to the generation of sustainable energy, Monterosola also has a rain- water harvesting system. Here, water is collected in large tanks and then passed through a purification plant, it is then usable in and around the cantina. The aim is for the energy usage at Monterosola to be up to 70% less than other traditional cantinas in the region.
